With the local fall apple harvest recently completed, there's plenty of flavorful apples available and an Apple Pie is the perfect dessert for your holiday gathering. Here's a recipe for you to try from Vittorio Servino:
5 Apples (Vittorio prefers a crispy Red varietal) peeled and cored*
Pinch of Allspice
2 Pinches of Cinnamon
Pinch of Salt
1 Cup Sugar
2 Tbs Flour
2 tsp Cornstarch
*tip: keep sliced apples in a bowl of cold water to keep fresh
Put butter in a frying pan over medium heat, add the apples and continually stir.
Slowly add the sugar, salt, and spices, continually stirring the apples.
Add flour and cornstarch to the mixture.
After cooking for no more than ten minutes, remove from the heat and let completely cool.
Prepare the pie-pan with your pastry dough, pour in the cooled apple mixture, and cover with a trellis or pastry dough top.
Brush the top layer of pastry or trellis with egg batter to create a golden color when baking.
Bake for 30-40 minutes at 350 degrees or until very brown.
