Summer isn't complete without a cool, crisp, salad and earlier this month we served an amazing Summer Apple Salad (one of our Culinary Director, Christian Darcoli's, signature recipes) at the 20th Annual V Foundation Wine Celebration in Yountville.
Before we give you the recipe, let's talk about this amazing event that raised more than $18 million dollars for cancer research.
The four-day event was hosted by the Emmy-winning co-host of ABC’s “Good Morning America,” Robin Roberts, and prominent sports-world figures Mike “Coach K” Krzyzewski, Scott Hamilton and Joe Theismann.
The event also gave us the chance to catch up with some of our favorite winery partners including Limerick Lane and AXR Napa Valley.
You can use any apples for this recipe, however we recommend using Granny Smith Apples, to balance the contrast between the tangy balsamic and the creamy goat cheese.
Chef Darcoli's Summer Apple Salad:
Granny Smith Apples
Laura Chanel Goat Cheese
Balsamic Vinegar
Walnuts
Arugula
Core and slice the Granny Smith Apples into Rings.
Soak in Balsamic Vinegar until it soaks into the apples.
Layer two apple rings with the Laura Chanel Goat Cheese.
Toss the Arugula with Balsamic Vinegar and place on a platter.
Place the layered Apple Rings on the Arugula.
Sprinkle with Walnuts and Serve.
